Revenue Center Rules

Need to manage your Patio tips separately from your Dining Room tips? The best way to manage tips for specific revenue centers is to create unique Job Codes for those areas and then create specific rules using those job codes.

Scenario

We have a restaurant with two distinct revenue centers: Patio service with a dedicated bar and support staff, and Dining Room service with a dedicated bar and support staff. Hosts and BOH work for both revenue centers.

To begin, we'll need one set of job codes for Patio staff and a second set of job codes for our Dining Room staff. Our front-of-house support staff (Bussers, Runners, and Barbacks) will also need two sets of job codes, one for the Patio workers and one for the Dining Room workers.

Hosts and BOH (Cooks, Prep Cooks, and Dishwashers) will be working for both revenue centers, so we will not need to create any unique job codes for those workers.

In the system that the employees use to clock in, we'll need to create the following job codes:
โ€‹
Patio Server

Patio Bartender

Patio Busser

Patio Runner

Patio Barback

Dining Room Server

Dining Room Bartender

Dining Room Busser

Dining Room Runner

Dining Room Barback

Host

Cook

Prep Cook

Dishwasher

Once those job codes are created, it is a simple matter of making sure the employees clock in to the correct job codes each shift and creating the Tip Distribution logic for each revenue center. The Tip Distribution Logic for our scenario might include the following Tip Sharing Rules and Tip Pools:

Tip Sharing Rules

Patio Server to Patio Bartender

Patio Server to Patio Busser

Patio Server to Patio Runner

Patio Bartender to Patio Barback

Patio Server/Bartender to Host

Patio Server/Bartender to Cook

Patio Server/Bartender to Prep Cook

Patio Server/Bartender to Dishwasher

Dining Room Server to Dining Room Bartender

Dining Room Server to Dining Room Busser

Dining Room Server to Dining Room Runner

Dining Room Bartender to Dining Room Barback

Dining Room Server/Bartender to Host

Dining Room Server/Bartender to Cook

Dining Room Server/Bartender to Prep Cook

Dining Room Server/Bartender to Dishwasher

Tip Pools

Patio Server Pool

Patio Bartender Pool

Dining Room Server Pool

Dining Room Bartender Pool

Once the rules are configured with percentages, effective dates, and distribution frequencies, the employees can clock in to the correct revenue center job code for their shifts, and our Tip Distribution Logic will handle the rest!

Customization

If this is too painful to manage on an operational level, we can create custom logic for our customers. Customizations are suitable for multi-unit operators (5+) that run the same concept, i.e., chains.
